Dehydrating Potatoes

Print Friendly, PDF & Email
As I have said before we get potatoes once a year ( we tried to grow some but the prairie dogs ate them all) They will keep for quite a while but not all year. What I don’t can I dry to use in stew, scalloped, and to mash. I also freeze a few for frying.

Start by peeling and washing them.

Slice into about 1/8 inch slices I use my mandolin which I love.
Put them in cold water after you slice to keep from turning brown.

After you get them all sliced put into boiling water for about 5 to 6 minutes to blanch.

After you blanch them put straight into cold water.

I add some ice to help keep the water cold so they will not keep cooking.

Drain well, I drain mine then put on a towel to help dry them off a little better. I forgot to take a picture of that.
Then put on your trays and dehydrate at 120 for 18 to 20 hours until brittle and semi-transparent.
Make sure they are dry any little bit of moister will cause them to mold.
1 cup of dried potatoes will equal 1 to 1 ½ cups cooked potatoes.
If you grate the potatoes for hash browns you only need to blanch for about 3 minutes.

    Hi-Ya Ranchers Wife;
A question if you don’t mind,
Have you tried dehydrating them without pealing them? Just scrub the skin really REALLY well. I like the skins for nutritional value and texture, so just wondering.
Those look like NAPA potatoes, you get them from there? Last time I got some they were around $10 per 100#. Good place to get produce for bulk canning and freezing.

      NRP,
I have done them without peeling if they look pretty good I will leave the peel on like you said though scrub really well. And yes they are NAPA potatoes, Love going there for potatoes I usually go once a year and get 1000 pounds by the time I give away I have around 800 pounds left. In fact, I am running behind this year so I am still working on them. Maybe I’ll be done by the time to go get more hahaha.
      Have a great day

          NRP,
In my defense, I do only end up with barely 800 pounds haha. I can a lot of soups And I have one daughter who comes over every couple weeks to load up on soup. Plus we do eat a lot of taters and I can, freeze, and dry, some for a rainy day haha. No such thing as too many tators. And to be honest when my Husband goes with me to get them and I tell him how many I want he just rolls his eyes and ask if I am sure I want that many haha.
