Canning /Dehydrating/freezing Challenge

I am starting this backup. With the way, things are we need to be putting back as much as we possibly can. And with produce being in season now is the time to do it. Even if you don’t have a large garden or any garden at all you still need to be putting things up. I watch for the sales at the store. They usually run a really good sale on fruits or veggies at least once a season. When they do and it isn’t something I can /or do grow I try to get as much as I can afford then either freeze/ dehydrate or can it.

Canning
I was able to get a case of peaches so I canned all of them. I got 14 quarts with a few leftover to just eat.
Found almond milk on sale and canned up several quarts of it ( I am using a lot of almond milk now that I can’t have dairy).
7 quarts of beef. I needed to make some room in the freezer .
11 quarts of strawberry jam.

Freezer
I found several pounds of bananas on markdown so got them and put them in the freezer. For the really ripe ones I put 6 in a bag and mashed them to use for bread the other ones, I put into bags whole to use for smoothies.

I put about 6 meals in the freezer using leftovers from dinner.

 

Dehydrated
Our humidity has been a little higher than normal so it seems like it is taking a lot longer to dry things.
I found some grated carrots and mushrooms on markdown and got several bags of each to dehydrate
I have been dehydrating a lot of lemons, I grind them up and put in my water since the whole lemon is good for the liver.
I did dry some of the strawberries so I can make a powder to use in recipes.

    Last week I did 31 pints of Beets and 20 1/2 pints of Pickled Banana Peppers.
    Have done 3 classes of Swiss Chard Soup….. man-o-nam is it good for a quick dinner.
    Been added Whole Chicken to the freezer. Better to freeze food than Air, keep those freezers full my friends, for hard times are upon us.

      Sounds like you have been busy lol. And yes better to freeze something other than air lol.

    I have been dehydrating zucchini, also will be drying peppermint for tea, onions, celery and should dry some carrots.

      Thank you can use all the prayer I can get 🙂 . I have several zucchinis that I am wanting to get into the dehydrator. I am hoping I have enough to dehydrate so I can grind some into flour. I haven’t ever tried this and really want to try it.
