Since it is zucchini time again I thought I would share 5 ways to use zucchini that you may not have thought of. They are all really good and different.
The first is a mock apple pie. This seriously tastes just like apple pie. The first time I fixed it for Andy he thought it was apple and then I sent a couple to work with him and all his co-worker’s thought is was apple and they loved it.Go here for the recipe.
The second is Zucchini Jam. You use jello to flavor it so you have a lot of flavor options.Go here for the recipe.
Fruit snacks / died pineapple. The kids love these and they are a whole lot better for them the store-bought fruit snacks. When my nephew was younger and I would watch him after school he knew where the jar of these was kept so the first thing he did when he got here was head to the jar of fruit snacks. Fruit rollups. again way better than store-bought. You use Koolaid to flavor them so there are a lot of flavor options. Go here for the recipe.

I would never have thought to use zucchini to make mock apple pie! I just picked up another 1/2 dozen today at the farm stand since I just LOVE zucchini and summer squash.

I know lol it sounds strange but you can’t tell the difference in it and real apples.
