Week in Review,Menu, & Goals

Another busy week and a great weekend.

Monday evening I had a fair meeting and didn’t get home till late so didn’t get much done. Tuesday I canned 9 pints of cucumber mint lime syrup and Wednesday I got the plums I had picked from our trees in the freezer. Pretty sure the weekend caught up with me though because Wednesday and Thursday both I was in bed by 9 and that doesn’t get to happen very often. Thursday  I got a cookie sheet (4 layers) of zucchini sticks breaded and in the freezer, 3-gallon bags of 6, 2 cup bags of shredded zucchini in the freezer.12 zucchinis cut, cleaned and baked to freeze for zucchini boats. I also got the beans cooked for the chili I had to take to Silverton this weekend.

 

We both took Friday off so we could leave for Silverton early. It was my nephews 16th birthday and he wanted us all to go on a jeep trip for it. We were able to get gone by ten. Got to Silverton and found a camping spot in Eureka that would fit all of us, 3 of my brothers and my Mom & Dad.

A little way out of Silverton we saw a couple of Moose cows and a Bull I got a couple of good pictures of the cows but never could get a good one of the bull but my Sister in Laws Sister in Law was able to get a good one of the bull and a cow when they went by.

It was a little chilly up there. Friday evening we just hung out in camp. Then Saturday morning we got up and got ready to do a jeep trip, I will have more on the whole trip in another post since there is a lot.

 

There were lots of slid areas we went through this one. You can see the trees poking out of the snow where the avalanche just picked it all up.

We did go to Animas Forks and dinked around there for a while. Animas Forks is an old mining town that they are working on restoring. It was pretty cool.

This was one of the houses we looked in. My Mom & Dad were coming outof it.

After Animas forks, we went up top engineer. It is just breathtaking being on top of these mountains you can see so far

We went on down to Rosa’s cabin then we turned around and came back ( we didn’t have time to do the whole loop).

We got back to camp and fixed Frito pies and some fried bread had birthday cake and ice cream then just sat around the fire visiting. And yes it was a little on the chilly side. The wind started blowing about 10 and blew all night with a little rain mixed in.

 

Sunday morning we got up and did a smaller trip through Placer gulch and back around through Animas Forks. The wind blew all day and we even got snowed on a little. Got back to camp about 3 and everyone packed up and went home. We got home unpacked, unhooked, and got chores done. By the time we got all that done it was dark.

 

I think we are staying home next weekend haha we do have a Birthday party for my Sister in Law to go to on Saturday night but other than that We may be able to stay home and get something done this next weekend.

Goals

Kitchen

One batch of Kombucha done and 2 dozen breakfast burritos in the freezer.

I need to get the peppers, onions, and tomatoes done up this week and the other two jars of Kombucha started’

 

Sewing

I got no sewing done this week so hoping I can finish up the pillows this week and get started on bags.

 

Fiber arts

Didn’t even work on any of these either hopefully get back on track this week.

 

Daycare

This is what I had from last week and didn’t get any of it done so I will hopefully get it done this week

I didn’t get lessons put together over the weekend so I want to get them planned and ready this week. I have a few ideas that I want to do with them so we will do that this week. I want to change out the dramatic play area to a beach. I have everything I need just need to get it put together. I didn’t get it changed out last week so will do it this week. I have got to get the lesson plans done. Just been winging it and it is a pain to do it that way.

 

Yard

Got all the fall stuff put up and mostly ready for winter. I do want to put some seed down before it snows but and going to wait a few weeks before I do that. I do have a few things on the playground that I want to try and get done.

 

Menu,

Breakfast,

  • Toast and bananas
  • waffles
  • Scrambled eggs
  • French Toast
  • Cream of Wheat

With this, we will have toast, or whatever sides I want to have with it.

 

Lunch,

  • Chicken,& dressing
  • Mac & pasta sauce
  • Scrambled eggs
  • PB&J
  • Ham & Cheese wraps

Will have whatever kind of fruit and vegetables I have,

For Andy’s lunch, he will have leftovers from the night before.

 

Dinner,

  • Stuffed peppers
  • Swiss Steak
  • King Ranch (we didn’t have it last week)
  • Salsbury Steaks
  • Stew

Will have a veggie of some sort, and bread with each meal.

    That sounds like such a fun way to celebrate a birthday! I love that you all got to experience something together; so much better than just buying and mailing a gift.

      Your life looks way more ambitious than mine, especially when I read what you’re canning an freezing! Great job! I need to write down my weekly goal, then actually accomplish them!
